This recipe makes 12 muffins
1 Tbsp lemon juice
1 cup milk
¼ cup oil (choose light flavoured oil like canola or grapeseed)
3 Tbsp blackstrap molasses
3 Tbsp honey
1 tsp vanilla
1 ½ cup blueberries (fresh or frozen)
1 cup wheat bran
1 ½ cups whole wheat flour
1 ½ tsp Baking powder
1 ½ tsp baking soda
1 cup sunflower seeds or walnuts (optional)Directions:
- Heat the oven to 325F
- Combine milk, lemon, oil, eggs, molasses, honey and vanilla
- Mix dry ingredients and add it to the wet ingredients
- Once lightly mixed, add blueberries and fold them in.
- Bake for about 20-25 min until knife inserted comes out clean
